Wingless Buffalo Chicken Pizza Recipe

Ingredients:

  • 3/4 pound chicken breast cutlets
  • Extra-virgin olive oil for drizzling
  • 2 teaspoons grill seasoning (like McCormick Montreal Seasoning)
  • 1 store-bought pizza dough
  • Cornmeal or flour for handling the dough
  • 2 tablespoons butter
  • 1 tablespoon Worcestershire sauce
  • 2 to 3 tablespoons hot sauce (medium to spicy)
  • 1/2 cup tomato sauce
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup blue cheese crumbles
  • 3 scallions, thinly sliced

Directions:

  1. Preheat the Oven and Grill Pan: Heat the oven to 425°F and set a grill pan over high heat.
  2. Season the Chicken: Drizzle the chicken breasts with olive oil and sprinkle grill seasoning on both sides. Once the grill pan is hot, cook the chicken for about 3 minutes per side until fully cooked.
  3. Prepare the Dough: While the chicken is grilling, stretch the pizza dough on a surface lightly dusted with cornmeal or flour. Let the dough rest for a few minutes to make it easier to handle, then place it on a pizza pan.
  4. Make the Buffalo Sauce: In a medium skillet over medium heat, melt the butter and stir in Worcestershire sauce, hot sauce, and tomato sauce.
  5. Slice and Coat the Chicken: After the chicken is done grilling, slice it thinly and toss it in the buffalo sauce until well-coated.
  6. Assemble the Pizza: Spread the buffalo chicken evenly over the pizza dough, then top with shredded Monterey Jack cheese, blue cheese crumbles, and sliced scallions.
  7. Bake: Bake in the oven for about 18 minutes or until the crust is crispy and the cheese is melted.
