Thai Chicken Pizza
Ingredients:
- 1 pre-made pizza dough
- 1/2 cup duck sauce or plum sauce
- 1/2 teaspoon crushed red pepper flakes
- 2 cups shredded provolone or Monterey Jack cheese
- 1/2 red bell pepper, thinly sliced
- 1 tablespoon vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon peanut butter
- 2 teaspoons hot sauce
- 2 teaspoons grill seasoning (like Montreal Steak Seasoning)
- 4 chicken breast cutlets (about 1/2 pound)
- 2 tablespoons honey
- 2 tablespoons rice wine vinegar or cider vinegar
- 1/4 seedless cucumber, cut into matchsticks
- 4 scallions, chopped
- 1 cup bean sprouts
- A handful of cilantro leaves, chopped
- 1/4 cup chopped peanuts (about 2 ounces)
Directions:
- Preheat the Oven: Set your oven to 425°F.
- Prepare the Pizza Base: Roll out the pizza dough onto a pizza pan or cookie sheet. Spread duck or plum sauce evenly over the dough as the base. Sprinkle with crushed red pepper flakes. Top with the shredded cheese and sliced red bell pepper. Bake the pizza until the crust is golden and the cheese is bubbly, about 15 to 17 minutes.
- Grill the Chicken: Preheat a grill pan over medium-high heat. In a small bowl, combine the vegetable oil, soy sauce, peanut butter, hot sauce, and grill seasoning. Microwave the mixture briefly (about 10 seconds) if the peanut butter is too thick. Coat the chicken cutlets with the sauce mixture and let them sit for 10 minutes. Grill the chicken for 2 to 3 minutes per side until cooked through, then slice the chicken into thin strips.
- Prepare the Cucumber Salad: While the chicken is grilling, mix the honey and vinegar in a bowl, then add the cucumber sticks. Toss to coat evenly and set aside.
- Assemble the Pizza: Once the pizza is baked, top it with the grilled chicken slices, chopped scallions, bean sprouts, and cilantro. Drain the cucumber salad and scatter the cucumber slices over the pizza. Garnish with chopped peanuts.
- Serve: Cut the pizza into 8 wedges and serve.
