Ingredients:

  • 1 to 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1/2 cup chicken broth
  • Three 15-ounce cans of crushed tomatoes
  • Salt and pepper, to taste
  • Pinch of sugar
  • 1 teaspoon dried oregano
  • 8 to 10 fresh basil leaves, chopped

Directions:

  1. Heat a tablespoon of olive oil in a pan over medium-high heat. Add the minced garlic and finely chopped onions, stirring frequently. Cook for about 4 to 5 minutes until the onions become soft.
  2. Pour in the chicken broth and whisk to deglaze the pan, scraping up any bits from the bottom. Allow it to cook until the broth reduces by half.
  3. Stir in the crushed tomatoes, then season with salt, pepper, and a pinch of sugar.
  4. Add the dried oregano and fresh basil to the sauce. Lower the heat and let the mixture simmer gently for about 30 minutes, stirring occasionally.
