Ingredients:
- 1 pre-made pizza dough
- 2 tablespoons melted butter
- 4 tablespoons Cinnamon-Sugar (recipe below), divided
- 2 cups mascarpone cheese
- 1 tablespoon heavy cream
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest (from 1 lemon)
- 2 cups mixed berries
Cinnamon-Sugar Mixture:
- 1 vanilla bean
- 1/2 cup sugar
- 1 tablespoon ground cinnamon
Directions:
- Preheat Oven: Set your oven to 350°F and line a baking sheet with parchment paper.
- Prepare the Dough: Roll out the store-bought pizza dough to a 1/4-inch thickness with a rolling pin. Place the rolled dough onto the prepared baking sheet.
- Add Butter and Sugar: Brush the surface of the dough with melted butter and sprinkle 2 tablespoons of the Cinnamon-Sugar mixture over it. Bake the dough for 10 to 15 minutes, or until golden brown. Once baked, let the crust cool on a wire rack.
- Prepare the Mascarpone Topping: In a bowl, mix the mascarpone cheese, heavy cream, lemon juice, and lemon zest until smooth and creamy.
- Assemble the Pizza: Once the crust has cooled, spread the mascarpone mixture evenly over the top. Arrange the mixed berries on the pizza and sprinkle the remaining 2 tablespoons of Cinnamon-Sugar over the berries.
- Serve: Slice the breakfast pizza as you would a traditional pizza and serve.
Cinnamon-Sugar Mixture:
- Slice the vanilla bean lengthwise and scrape out the seeds using the back of a knife.
- Combine the vanilla seeds with sugar and cinnamon in a small bowl. Stir to mix evenly.
